Another successful dinner ...

I am on a roll here people!!!

Chicken nuggets have not been served for 2 weeks now in our house.

I might ...

Just might ...

Be able to cook ...

We LOVE to eat calzones in our house. My oldest daughter would much rather us order calzones than pizza.

Oh my gosh, they are so delicious ... AND ... I just discovered they are so easy to make...seriously!!!  And if I say it is easy ... then you know it is the truth.

Yummy Calzones



All you need is some frozen bread dough, pepperoni, mozzarella, Parmesan cheese and olive oil.

Buy some frozen bread dough. They come in these "log" shapes ... in plastic bags ... sold in the freezer section for about $4.00. 

Loosely cover the frozen bread dough with plastic wrap.
 
Allow dough to rise over night.

FYI:  Spray the plastic wrap with cooking oil, or brush with cooking oil and lay it, oiled side down on the bread dough. This allows the bread dough to rise and move easily under the plastic wrap without it sticking or holding back the dough.  I learned this the hard way.

After the dough has rised ... roll each loaf out into an 11 x 11 square.

One bread loaf ... makes one calzone.

Lay pepperoni on dough covering entire surface.

Sprinkle with shredded mozzarella cheese.

Next ... sprinkle with shredded Parmesan cheese.
Roll up dough starting at one edge of square.

Place rolls on baking sheet ... leaving space between.

Put a few slits on top of each calzone.
Bake it right away. It will rise up in the oven perfectly.

Bake at 375 ... for about 20 to 30 minutes.

This has been a repeat meal in our house for a month now.  My middle daughter especially loves it.  5 out of 5 Moore family members recommend this dinner at your table tomorrow evening.

Success!!!

Boo-yah!!!

I FINALLY cooked something that was eatible ...

AND ...

Wait for it ...

EVERYONE in the family liked it.

Yes!!!  Harleigh AND Eythen ate everything on their plate.

Who would have thought?!?!?!

Dorito Bake




4 cups shredded cooked chicken

2 cups shredded cheese

2 cans cream of chicken soup

1 cup milk

1 cup sour cream

1 packet taco seasoning

2 Bags of doritos

Pre-heat oven to 350-f degrees.

In a mixing bowl ...

Combine all ingredients except doritos.

In a large greased baking dish ...

Put 1 bag of broken pieces of doritis ...

Then a layer of the chicken mixture.

Repeat once more.

Top with more shredded cheese.

Cover.

Bake for 30-35 minutes ... till bubbling hot.

The only down fall with this meal ... is that if you do not serve it instantly ... the Doritos get soggy.  Which makes left overs not so great.  But it still was some yummy carb-filled goodness.

Have Gambino's number on stand by ...

As you know ... I am addicted to Pinterest.  Which ... makes me think I can cook.  Which ... sometimes it seems like I am getting the hang of this whole boiling water thing.  And other times ... we are right back to dialing Gambino's number last minute because I screwed up dinner ... again.

Since the times that a meal actually TURNS OUT ...

AND ...

When at least 2 out of 3 of the Moore children like it ...

Are few and far from in between.

So when those golden moments happen ... it is a time to celebrate.

So I have decided to add some of the meals that turned out ...

AND ...

Only 1 out of 3 of my children pouted and begged for chicken nuggets.

CHICKEN ENCHILADA PASTA




2-3 chicken breasts, cooked & shredded

1/2 tsp. salt

2 {10 oz.} cans green chili enchilada sauce

2/3 cups red enchilada sauce

1 {10 oz.} can of tomato sauce

2 cups shredded cheese {I used personally used cheddar}

1 cup sour cream

Penne pasta

Cook chicken, drain, and shred.

Meanwhile boil pasta according to package.
Add cooked chicken, tomato sauce & enchilada sauces.

Let sauce simmer for about 8-10 minutes.

Add cheese and stir until the cheese is melted and heated through.

Now toss in the sour cream ...
Stir until sour cream is well mixed and heated through.

Now comes the little bit of heaven.

Drain pasta & return to pot.  Pour sauce over pasta and mix well.

Serve and garnish with avocado, tomato, green onion or a dollop of sour cream.  Personally ... I just added a salt and pepper ... and did not add anything to the top of it.  It was so darn yummy!!!  The hubs loved it.  I loved it.  Oldest daughter loved it.  Second daughter asked for seconds.  Youngest ... well ... he pushed it around his plate until I finally put the plate in the dishwasher.
